My Favorite Fudge
1 cup cocoa powder
1 cup honey (melt on low heat, if bumpy or hard)
3/4 cup coconut oil
1 teaspoon vanilla
2 pinches salt
Walnuts (optional)
Place all ingredients, except walnuts, in food processor. Whiz until smooth but don't whiz too long or else it will get a little too soupy. Add the nuts, if using, and let whirl for a little bit more.
Line a bread pan with plastic food wrap and pour the fudge in. Use your hands to smooth out the top so it is even. Wrap the plastic wrap over top to cover.
Place in the refrigerator for at least a 1/2 hour. (I like to put this in the freezer for maybe a half hour and then put it in the frig. )
To serve, take out of pan, unwrap plastic wrap, and cut into squares and enjoy!
