Iowa: a featured recipe

As summer comes and I get busier I'll most likely make either one or just a few recipes from each state....and I'm also going to make a little change and try to share some of the recipe with you. :)  I figured that might be more enjoyable for you all!

I made Amana Brod Kloeschen In Suppe, (Bread Dumplings in Soup).  I changed them some but they were very good in our Cream of Tomato Soup!! :)  The recipe is Dutch.

Among many recipes from Iowa, they had several catsup recipes, i.e. Gooseberry Catsup, Currant Catsup, Cherry Catsup and Cucumber Catsup!   We had lots of Currants in our freezer so I made the Currant Catsup!  (Picture above.)  I halved this recipe.

Currant Catsup
3 quarts ripe currants
1 1/2 pounds sugar
1 tablespoon ground cinnamon
1 teaspoon salt
1 teaspoon ground cloves
1 teaspoon pepper
2 cups cider vinegar
Stew currants and sugar together until thick, add everything else, boil a little longer to reduce vinegar, stirring constantly, strain and bottle.
